As a featured speaker at the GIG (Gluten Intolerance Group of North America) National Conference (June 3-5th), Dr. Wangen will review the process that led to the writing of his most recent book, Healthier Without Wheat: A New Understanding of Wheat Allergies, Celiac Disease, and Non-Celiac Gluten Intolerance. You will gain a whole new appreciation for the differences between and intolerances, and how and why people react to wheat and to gluten. Of major focus will be a discussion on how celiac disease only represents a small fraction of those with gluten intolerance, and why celiac disease is not necessarily worse than other forms of gluten intolerance. This presentation will challenge your assumptions about the science behind food reactions, and separate fact from fiction in the world of gluten intolerance.
