He provided the basis for a whole new appreciation for the differences between and intolerances, and how and why people react to wheat and to gluten. Of major focus was a discussion on how celiac disease only represents a small fraction of those with gluten intolerance, and why celiac disease is not necessarily worse than other forms of gluten intolerance. This presentation challenged assumptions about the science behind food reactions, and separated fact from fiction in the world of gluten intolerance. It was very well received.
